After the sweaty playtime, a plate of carrot sandwiches coming out of mummy’s kitchen made my hungry tummy smile. Childhood was all about playing hard and coming home to devour evening snacks. Growing up in a big joint family (a concept which has been common in India), we didn’t have much say in what we preferred to eat. Mother and aunts who managed the kitchen saved themselves the horror of cooking dishes based on the preferences of each one of the fourteen people living together! A huge side benefit of that is we all grew up eating everything that was prepared by the lovely women in the house. We are happy not to be picky eaters today 🙂
Every evening, after involving ourselves in group games with the other kids in the neighbourhood laughing, screaming, quarreling, and exhausting all the energy, we would walk back eager to eat our portion of treats ready at home. There wasn’t a repetition of the snacks in the same week and options ranged from a homemade variety of bhajjias, sandwiches, sev, chaklis, toast, besan bread, chowmein to snacks bought from our famous halwais and samosa-walas. When there’s no fancy snack prep done, the power ladies will storm up a variation from the leftovers of the morning meal. A simple bowl of steamed rice will be turned impressive with a red chilly, curry leaves, nuts, and ghee tadka. Or a pulka is pressed and oil roasted on a tava to make it extra crisp (and yummy) to be eaten with homemade lemon pickle or any other delish pickle.
So let me tell you the recipe for a simple but delicious carrot & cheese sandwich. It makes for a great hurried breakfast and an interesting snack option. My husband is also a big fan of the carrot sandwich and he takes an extra portion of cheese to make his sandwiches. The best part of this recipe is you will never go wrong in making this sandwich delish even while increasing or reducing the number of carrots or cheese as you prefer!
Ingredients
- 1 grated carrot, medium-size
- ½ cup grated cheddar cheese (or any hard cheese available)
- 1 small green chilly, finely chopped (or ground pepper is a great replacement)
- Bread slices
- Butter
Method
- In a bowl mix grated carrot and green chilly/ ground pepper
- Butter the bread slices and make a sandwich with the filling of carrot and cheese.
- Either pan toast it on a lightly buttered surface or grill it in a sandwich maker.
- Ready to enjoy breakfast or as a healthy snack!
